Is practicing 500 programming questions on LeetCode, HackerEarth, etc, enough to prepare for a Google interview?

Number of questions doesn't matter, quality matters. Your objective should be to go through different type of problems and build intution over the time to correctly approach them. That will help you with thinking in multiple directions when tackling a new problem. Most of FAANG companies look for your problem solving skills which you build by solving different kind of problems. If you just mug up x number of problems that wouldn't be much useful.
